Pan-Fried Sea Bass with Crispy Chilli, Ginger, Garlic, Spring Onions, and a Sticky Soy Sauce.

Healthy, quick to make (15 mins!), and amazing flavours, what's not to love about this Seabass dish. The aroma's from this quick 15-minute dish are simply stunning, and it's even better if you get to enjoy it by the beach in Cornwall, or fresh from your BBQ.

Ingredients (for 2 portions):

  • 2 x Sea Bass Fillets, skin on and de-scaled

  • Olive Oil

  • Knob of Butter

  • Knob of ginger, peeled, shredded into matchsticks

  • 2 Garlic Cloves, Thinly Sliced

  • 1 Fresh Red Chilli, De-seeded and Finely Sliced

  • 1 Bunch of Spring Onions, Shredded / Finely Sliced

  • Soy Sauce

  • Fresh Rocket

  • Lemon Oil / A Little Fresh Lemon Juice

  • Bunch of Fresh Coriander

Method:

First, prepare all the veg, peel and finely slice the ginger into matchsticks, finely slice the garlic, de-seeded red chilli, and spring onions. Season your sea bass fillets with rock salt and pepper and slash the skin a little, with a sharp knife. In a frying pan, add a little olive oil and heat up. Fry the sea bass fillets skin side down for around 4-5 mins, or until the skin is very crispy. Flip over to the other side for 30 secs - 1 min to finish.


Set the sea bass aside on a warm plate, season with rock salt and black pepper, and splash with a little soy sauce. Add a little more olive oil to the same pan and some butter. Fry the veg for a couple of mins until crispy, chuck in the spring onions. Spoon the contents of the pan over the sea bass fillets, saucing to taste, finishing with some freshly chopped coriander.


Serve these with a little rocket and coriander salad, finished with lemon oil and a splash of fresh lemon juice. Amazing!
