Ingredients:
80ml hoisin sauce
80ml soy sauce
2 tbsp Chinese Shaoxing wine (rice vinegar can be used instead)
2 tbsp honey
2 tbsp brown sugar
1 tbsp minced garlic
1 tsp minced ginger
1 tsp red food colouring/food colouring powder
1 + a half tsp Chinese five-spice powder
Pack of Pork Belly Slices
Spring Onions (to garnish)
Sliced Red Chilli (to garnish)
Method:
Combine hoisin sauce, soy sauce, Shaoxing Wine, honey, garlic, brown sugar, ginger, red colouring, and five-spice powder in a shallow bowl. Whisk well to combine. Pour a third of the sauce into a jug or small pot and reserve for later for basting. Add the pork into the bowl with the remaining sauce. Rotate to cover completely and marinate in the refrigerator for 4 - 8 hours, or cover and refrigerate overnight for best results. Give it a little shake-up every few hours to evenly distribute the marinade.
After marinading, preheat your grill to medium-high, drain pork and discard the marinade. Line a thin baking tray with greaseproof paper and spread out evenly. Grill these on medium-high heat, turning and basting regularly. This will take about 30-35 mins, you want a little char on them. Or you can cook them low and slow on a charcoal grill / BBQ.
To Serve:
Let the Pork Belly bites sit for a few minutes, then sprinkle with freshly sliced spring onion and red chilli (optional) service immediately!
